This salad combines kale with avocado for a hint of creaminess and good old British, seasonal strawberries to add a delicate and sweet flavour. No need for dessert afterwards!
The recipe can be varied by using different nuts or seeds, adding other veggies and served with practically anything. For lunch, throw in some feta cheese and as a main meal it can be combined for example, with grilled chicken or salmon.
200g of kale
100g of strawberries
1 large handful of pumpkins seeds (other seeds or chopped nuts can be used)
juice of 1/2 a lemon
3 dessertspoons of tahini
2 dessertspoons of tamari
2 dessertspoons of olive oil
salt & pepper
Tear up the kale and place it in a salad bowl.
Pour over the lemon juice, olive oil, tamari, tahini, salt and pepper. Then using your hands, massage the dressing into the kale leaves until you feel them soften.
Add the chopped avocado, strawberries and pumpkin seeds to the kale and dressing. Toss gently. Use some additional strawberries for decoration if you wish.
