Despite their minute size, chia seeds are one of those not-to-be-forgotten superfoods.
Not only are they loaded with protein, fibre and omega 3, but they also have this unique gelling ability, due to their soluble fibre content and that the outer shell can absorb 10 times their weight in liquid. Pretty amazing right!
Berries (another superfood) are your best friend too. While low in natural sugars their ripe taste will fool your body into feeling sweet-satisfied.
Together with some healthy granola for added crunchiness, this Berry & Chia Parfait is one dessert you can confidently dive into without feeling guilty - no sugar, no dairy and packed with nutrients.
30g chia seeds
1 dessertspoon raw honey
200ml coconut milk
1 teaspoon vanilla extract
4 tablespoons granola
1 cup mixed berries
- Mix all of the ingredients together (except the granola and berries) in a small bowl and leave in the fridge overnight to set
- To make the parfait, layer in a bowl, sundae glass or mason jar half of the chia mixture
- Follow with half of the granola, then half of the berries
- Repeat steps 2 and 3 again to create a second layer
- Serve and enjoy
